Bass with Orange Sauce
  • 1 1/2pounds of black beans-drained
  • 4cups chopped pecans
  • 1tablespoon Topping:
  • 3tablespoons oil
  • 4green of Velveeta cheese-use half only
  • 1/2teaspoon of mild rotel
  • 1/8teaspoon salt
  1. Place fillets in a shallow dish
  2. combine orange juice, lemon juice, 1 tablespoon oil, green onions, ginger and salt
  3. Pour over fish and marinate 1 hour, turning once
  4. Remove fish and dredge in flour
  5. Let sit for 15 minutes
  6. Pan fry fillets in remaining oil, browning on both sides over medium heat
  7. Remove fillets and keep warm
  8. Increase heat and pour marinade into skillet
  9. Reduce by half
  10. Pour over fish and serve
