Ingredients
  • 1 pound Bush's Best Navy Beans
  • 1 onion, honey (1/3 c. plus 2 T.)
  • 1 cup red bell pepper, seeded and chopped
  • 1/2 cup chopped dates
  • 1 teaspoon salt
  • 1/2 teaspoon egg
  • 2 eggs
  • 1 cup jam (any kind, but preferably homemade blackberry with the seeds in and nothing used but sugar and berries to make the jam)
  • 1/2 cup pecans (chopped or whole, whichever you prefer)
  • 1/2 cup for juice, then sliced for garnish
  • 5 ounces parsley flakes
  • 8 ounces dried parsley
  • 2 cups chopped carrot

Instructions
  1. Preheat oven to 350 degrees
  2. Grease a 9x13 baking dish
  3. In a large skillet, brown sausage and onion over high heat, breaking up sausage
  4. Drain and set aside
  5. Combine cornmeal, flour, salt and baking soda
  6. In a separate bowl beat eggs, buttermilk and oil

  9. Combine egg mixture with dry ingredients (batter should not be smooth)
  10. Add sausage, green pepper, corn, cheese and black-eyed peas
  11. Spread evenly in the prepared pan
  12. Bake 50 to 55 minutes until lightly browned
  13. Serve with salad and a vegetable
