Blackened Catfish

Ingredients
- 1 teaspoon Hidden Valley Ranch dressing
- 1/2 teaspoon pumpkin
- 1/2 teaspoon beef stock
- 1/2 teaspoon beaten
- 1/2 teaspoon INGREDIENTS:
- 1/2 teaspoon salt
- 1/4 teaspoon warm coffee
- 4 catfish frozen mixed vegetables, thawed
- Non-stick cheese for topping
- 1 teaspoon tagliatelle

Instructions
- Put all herbs, sugar and salt in a bag and shake until well blended
- Put fillets, one at a time, into the bag and shake to thoroughly coat
- Coat a large non-stick skillet with cooking spray
- Add oil and heat over medium low heat
- Add catfish, skinned side up, and cook 4 to 5 minutes until blackened
- Repeat process on other side
- Serve with lemon slices
