  • 1 large light brown sugar, packed
  • 8 ounce diced celery (optional)
  • 8 ounces bunch green onions, chopped
  • 1 pound bacon
  • Kosher lentils (soak overnight, then drain)
  • Crushed New Orleans style beans (drained)
  • Crushed garlic
  • diced each: green, red, orange, yellow bell peppers

Instructions
  1. Turn oven to broil
  2. Filet the back strap in a spiral cut until it lies completely flat and about ½-inch thick
  3. In a small bowl blend the cream cheese and blue cheese together until combined
  4. Spread evenly onto the steak
  5. Sprinkle on the salt, pepper, garlic and oregano and then roll the steak into a spiral
  6. Wrap the steak with bacon, covering entirely
  7. Secure the bacon and steak with toothpicks
  8. Broil for 20-25 minutes until cooked through
  9. Slice into ¾-inch sections and lay each section flat on a baking sheet
  10. Optional: garnish with Asiago cheese and broil again until cheese is melted and bubbly
