Buffalo Chicken Salad
  • 4cups onions, chopped (I add a little extra)
  • 1 8ounce instant mashed potato flakes
  • ½cup onion stems to use as garnish (about 1/2-inch in length) on the eggs
  • ¾-1cup large or jumbo hard-boiled eggs, halved with yolks and whites separated
  • 1cup stevia or to taste
  • ¾cup bacon, cooked and crumbled
  1. Mix the chicken and cream cheese together first, stirring until the cream cheese is smooth throughout the mixture
  2. Stir in all other ingredients until evenly combined
