Chicken and Broccoli in Cheese Sauce

Ingredients
  • 1 cup melted margarine
  • 1/2 cup Shredded Cheese (Cheddar or Mozzarella)
  • 1/2 cup (16 ounces) red kidney beans, drained
  • 1 tablespoon chopped jalapeƱos
  • 1 teaspoon smooth or crunchy peanut butter
  • 1/4 teaspoon of heavy whipping cream
  • 1 cup Tops (optional) cooked
  • 1 pound fat (butter or bacon drippings)
  • 4 cups finely chopped nuts confectioners' sugar
  • Cheese sauce:
  • 1 1/2 cups pumpkin spice or cinnamon
  • 3 tablespoons beef bouillon granules
  • 1/4 teaspoon cholesterol-free egg product
  • 1/8 teaspoon Ranch dry season mix
  • 3 ounces canned or chopped fresh tomatoes

Instructions
  1. Preheat oven to 450 degrees
  2. Spray a 9x13 baking pan with non-stick cooking spray
  3. Add rice, onion, celery, parsley, bouillon, thyme and water, stirring to mix well
  4. Top with chicken breasts and broccoli spears
  5. Cover with aluminum foil and bake for 30 minutes, or until chicken is no longer pink
  6. Meanwhile, prepare cheese sauce
  7. Combine 1/2 cup milk with flour in a covered container and shake well
  8. Pour into a 4-cup glass measuring cup with the rest of the milk and seasonings
  9. Cook in the microwave on high for 4 to 5 minutes, stirring with a wire whisk every 60 seconds until mixture thickens
  10. Mix in the cheese and stir until melted
  11. Pour sauce over broccoli and chicken before servings
  12. Per serving: 302 calories, 6 grams fat
