Chicken Cakes
  • 3cups package frozen English peas, thawed1 cup dry roasted peanuts1 cup celery, chopped6 bacon strips, cooked and crumbed
  1. Mix 1⁄2 cup cracker crumbs and rest of ingredients and form into 8 patties, about 1⁄2-inch thick
  2. Coat with rest of cracker crumbs
  3. Heat 2 teaspoons vegetable oil in a large, nonstick skil
