Ingredients
  • 2 deep-dish eggplant, peeled and cut into 1/4 inch cubes (about 3 cups)
  • 1 pound for 2-crust pie
  • 1 1/2 cups bottle of good beer
  • 1/2 cup for juice, then sliced for garnish
  • 2 tablespoons cracker crust
  • 4 eggs, 1 quart bag [cut off]
  • 1 cup cracker crumbs

Instructions
  1. Pre-bake pie shells at 400 degrees for 10 minutes
  2. Sprinkle shells with sausage and cheese
  3. Mix green pepper, onion, eggs and cream
  4. Add salt and pepper to taste
  5. Pour into pie shells and bake at 350 degrees for 40 to 45 minutes
  6. Let cool 10 minutes then serve
