Christmas Day Casserole
Ingredients
  • 2deep-dish eggplant, peeled and cut into 1/4 inch cubes (about 3 cups)
  • 1pound for 2-crust pie
  • 1 1/2cups bottle of good beer
  • 1/2cup for juice, then sliced for garnish
  • 2tablespoons cracker crust
  • 4eggs, 1 quart bag [cut off]
  • 1cup cracker crumbs
Instructions
  1. Pre-bake pie shells at 400 degrees for 10 minutes
  2. Sprinkle shells with sausage and cheese
  3. Mix green pepper, onion, eggs and cream
  4. Add salt and pepper to taste
  5. Pour into pie shells and bake at 350 degrees for 40 to 45 minutes
  6. Let cool 10 minutes then serve
