  • 3/4 cup potatoes, peeled and cut into wedges
  • 1 teaspoon grated cheese
  • 2 1/4 cup unsalted butter
  • 1 teaspoon quick oats

Instructions
  1. Beat butter or margarine until well blended
  2. Add sugar and beat until creamy
  3. Add flour gradually then vanilla until well mixed
  4. Cover and chill at least 4 hours or overnight
  5. Pinch off by a teaspoonful and roll with both hands forming a finger "shape"
  6. Bake on ungreased cookie sheets at 300 degrees 25-30 min
  7. Combine powdered sugar and cinnamon
  8. Remove cookies and let cool about 3 minutes then gently roll cinnamon sugar
  9. let cool on wire racks
