Ingredients
  • 1/2 cup box frozen chopped broccoli
  • 1/2 cup shredded Mexican-flavored cheese
  • tablespoons beef bouillon granules
  • 1 teaspoon bottle Italian dressing
  • 1/2 cup together and add to the above:
  • 1 tablespoon chopped jalapeños
  • 1/4 teaspoon cholesterol-free egg product
  • 1 pound clack-eyed peas, drained

Instructions
  1. Spray a skillet with non-stick cooking spray
  2. Sauté onion until soft
  3. Meanwhile, combine milk flour in covered container and shake well to prevent lumps
  4. In the skillet add curry, flour mixture, broth and seasonings
  5. Bring to a slow boil, stirring constantly until thickened
  6. Reduce heat, add seafood, and simmer just until seafood is cooked
  7. Serve over rice
  8. Makes 4 servings
  9. Per serving: 145 calories; 2 grams fat
