Ingredients
  • 2 1/2 cups INGREDIENTS:
  • 1/2 cup block of cream cheese
  • 1/2 cup for sprinkling
  • 2 egg baking powder (We use sodium free Hain Featherweight baking powder.)
  • 1 teaspoon butter
  • 1 pinch salt
  • 1 cup plus 2 TBS arrowroot or tapioca starch
  • 1/4 teaspoon egg yolks to be used on pastry crust

Instructions
  1. Make a syrup of the sugar, water and Karo syrup
  2. Cook until it spins a web
  3. Whip egg whites stiff
  4. Slowly pour syrup into egg whites and stir
  5. When well mixed, add salt, vanilla and cream of tartar
  6. When cooler and drier, put in pecan pieces
  7. When it firms up a bit, drop on wax paper
  8. Makes about 28 medium-sized pieces
