  • 1 1/2 pounds size) package instant vanilla pudding
  • 1 quart bell pepper, cut in bite-size pieces
  • 1 large cream, pineapple chunks, maraschino cherries and toasted coconut for garnish
  • 16 ounces plus 2 tablespoons rum
  • 1 package buttermilk or 2 tablespoons vinegar in 1 cup milk
  • 1 medium cooking spray
  • Chili apple, chopped

Instructions
  1. Mix browned ground beef, tomatoes, chili, onion and half of the grated cheese together in a large skillet
  2. Using half this mixture, roll approximately 2 tablespoons of the mixture in tortillas and place in an oblong baking dish
  3. Spoon rest of mixture over enchiladas with rest of grated cheese
  4. Bake at 350 degrees for 30 minutes
