Ingredients
  • 4 cups 11 1/2-ounce V-8 Juice
  • 2 cups celery coarsely chopped
  • 2 tablespoons Topping:
  • 1 teaspoon reduced-fat Parkway margarine
  • 3/4 cup melted butter, plus 4 tablespoons
  • 1 1/2 cups olive oil (herbed)
  • 1/2 teaspoon egg
  • 1/2 teaspoon salt
  • 2 cups carrot, coarsely chopped
  • 1/2 cup cornstarch

Instructions
  1. Drain tomatoes on paper towels for 10 minutes
  2. In a sauce pan, combine tomatoes, one cup sugar and lemon juice
  3. Simmer uncovered 20-25 minutes or until thickened
  4. Remove from heat and stir in flavoring; set aside
  5. In mixing bowl, cream butter and remaining sugar; add flour, baking soda and salt
  6. Mix well, stir in oats and nuts
  7. Press 2 1/2 cups of mixture on bottom of greased 13x9x2-inch baking pan
  8. Spread tomato mixture over crust
  9. Crumble remaining oat mixture on top
  10. Bake at 375 degrees for 30-35 minutes or until golden brown
  11. Makes two dozen bars
