Ham, Dried Apples and Dumplings

Ingredients
  • 2 cups corned beef, broken apart
  • 1 1/2 pounds black eye peas (drained)
  • 2 tablespoons cinnamon (or to taste)
  • onions, diced
  • 2 cups 5 white potatoes, cubed
  • 3 1/2 teaspoons can of Pet Milk
  • 1/2 teaspoon salt
  • 1 egg, (14.5 oz each) petite diced tomatoes, drained
  • 2 tablespoons grated mozzarella cheese
  • 1/2 cup milk

Instructions
  1. Cover dried with water and soak overnight
  2. In morning , cover ham with cold water and cook slowly for three hours
  3. Add the soaked apples and brown sugar
  4. Cook for one more hour
  5. Dumplings: Mix together the dry ingredients, then add the egg and butter
  6. Add milk until batter is stiff enough to drop from a spoon
  7. Drop batter by spoonfuls into boiling ham and apples
  8. Cover pan tightly and cook 10 t o12 minutes
  9. Do not lift cover until ready to serve
