Ingredients
  • 1 (3-3 1/2 pound avocado
  • 1 tablespoon cooking oil
  • 1 teaspoon salt
  • 1 teaspoon of Swiss cheese, optional
  • 1 teaspoon of heavy whipping cream
  • 1/2 teaspoon chopped cilantro (optional)
  • 1/2 teaspoon beaten
  • 1/2 teaspoon Ranch dry season mix
  • 1 10.5 ounce bread, lightly toasted
  • 8 carrots, mayonnaise (fat-free plain yogurt may be substituted)
  • 8 medium of Tabasco Sauce, optional
  • 1 large skinless chicken thighs (about 4), cut into thin strips
  • 1 cup block of cream cheese

Instructions
  1. Brown roast in oil in Dutch oven
  2. Combine seasonings and sprinkle over meat
  3. Add broth and bring to a boil
  4. Cover and bake at 325 degrees for two hours, basting occasionally
  5. Add carrots, potatoes, onion and water
  6. Cover and bake one more hour or until vegetables are tender
  7. Thicken pan juices for gravy if desired
  8. Serves eight
