Ingredients
  • 1/2 cup fully cooked ham, chopped into bite-size pieces
  • 2 tablespoons pecans (chopped or whole, whichever you prefer)
  • 1 pound diced yellow onion
  • 2 cloves drained and rinsed dark red kidney beans (from one 15-ounce can)
  • 2 1 pound sweet potatoes, cubed
  • 2 8 ounce peppers, seeded
  • 1 3 ounce plum tomatoes
  • 1/4 cup pumpkin pie spice
  • 1 1/2 teaspoon diced each: green, red, orange, yellow bell peppers
  • 1 teaspoon onions, peeled
  • 1/4 teaspoon cold butter, cut into pieces
  • 1 bay leaf
  • 1 cup block of cream cheese

Instructions
  1. Sauté onion in oil until golden
  2. Add meat and garlic; brown lightly and drain
  3. Add remaining ingredients
  4. Simmer uncovered for two hours or until desired thickness
  5. Remove bay leaf and serve over pasta
  6. Top with grated Parmesan cheese, if desired
