Lawson’s Fabulous Cinnamon Rolls (Bread Machine Recipe)

Ingredients
  • Dough: green peppers, optional
  • 6 ounces can tomato paste, use one-half for recipe and one-half for basting
  • 1 large can beer, at room temperature
  • 3 cups firmly packed light brown sugar
  • 3 tablespoons INGREDIENTS:
  • 4 tablespoons soft bread crumbs, cut into half- inch cubes
  • 2 teaspoons frozen chopped onions
  • or cornbread, cooked and crumbled
  • Filling:
  • 1/3 cup ritz crackers, crumbled
  • 1/3 cup INGREDIENTS:
  • 2 teaspoons quick oats
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup combination of ground beef and pork
  • mascarpone cheese
  • 1 cup unsalted butter
  • 1 or crushed thyme leaves
  • 1/2 teaspoon butter

Instructions
  1. * My machine requires liquids first-but follow the directions on your particular machine
  2. Add milk and egg to pan; next add flour, sugar and salt
  3. Tap pan to settle ingredients, level them, then push a small amount into corners
  4. Place one tablespoon butter in each corner of pan; make a small well in center of dry ingredients and add yeast
  5. Lock pan into bread maker and set program for dough
  6. Start bread maker when done (about one hour and 20 minutes)
  7. Remove pan and place dough on floured surface
  8. Knead dough about one minute; let rest for 15 minutes; then roll dough into a 10x15-inch rectangle
  9. Spread 1/3 cup melted butter over dough to within one inch of edges; sprinkle 1/3 cup sugar, cinnamon, nutmeg and chopped nuts evenly over dough
  10. Roll dough up tightly on long side
  11. press edges to seal and form into a 12-inch long, evenly shaped roll
  12. Use a 12-inch length of dental floss to cut roll into 12, one inch thick slices (slide dental floss under roll,pull ends up, cross on top then pull ends to neatly cut through dough
  13. Place into a greased 13x9-inch pan; cover and let rise in a warm, draft-free place until doubled in size, about 30-45 minutes until golden
  14. Cool in pan on rack for 10-15 minutes and drizzle with powdered sugar icing
  15. Icing: Combine one cup powdered sugar with one or two tablespoons milk and 1/2 teaspoon vanilla
  16. Blend until smooth (if too thin add more sugar, if too thin add more milk) until desired consistency; drizzle over rolls, cut apart and remove from pan
  17. Conventional Method: sprinkle yeast over warmth milk in large bowl and let stand five minutes
  18. add sugar, salt and egg and stir until blended
  19. Cut butter into small pieces and add to mixture
  20. stir in flour and turn out onto a lightly floured board; knead until smooth (about five minutes)
  21. Roll out to a 10x15-inch rectangle and proceed as instructed above
