Ingredients
  • 1/3 cup carob powder
  • ¼ cup plain flour
  • 1 teaspoon of 1/2 Lemon
  • ¼ teaspoon salt
  • 2 tablespoon butter
  • 4 8 ounce red potatoes, very thinly sliced

Instructions
  1. Combine first 5 ingredients in a saucepan
  2. Cook over low heat until blended, stirring frequently
  3. Place chicken in a sealable plastic bag
  4. Pour honey mixture over chicken and seal tightly
  5. Turn to coat
  6. Marinate in refrigerator 2-10 hours, turning occasionally
  7. Arrange un-drained chicken in a single layer in a 9x13-inch baking pan sprayed with nonstick cooking spray
  8. Bake at 400 degrees for 30-40 minutes, or until chicken is cooked through
  9. Baste with pan juices 3 times
