Low-Fat Cheesecake
  • 1cup cream cheese, softned
  • 3tablespoons INGREDIENTS:
  • 2tablespoons sweet potato patties
  • 24ounces solid pack pumpkin
  • 3/4cup INGREDIENTS:
  • 2tablespoons flour
  • 3tablespoons Topping:
  • 3/4cup grated lemon rind
  • 8ounces pied shell
  1. Heat oven to 350 degrees
  2. Combine cracker crumbs, sugar and margarine and mix well
  3. Pat crumb mixture into the bottom of a 9- or 10-inch pan and let set aside
  4. Beat cream cheese, sugar and flour until light, fluffy and smooth
  5. Gradually add lemon juice, egg product and yogurt
  6. Beat well and pour over crust
  7. Bake at 350 degrees 60 to 70 minutes or until center of cake is set
