  • 2 tablespoons flour
  • 2 tablespoons sweet potato patties
  • 1 1/2 cups shredded Mexican-flavored cheese
  • Lemon non-fat plain yogurt
  • Chopped plums
  • Black cayenne pepper, optional
  • 1/4 cup (30-count) Gulf Wild Shrimp, shells removed
  • 8 ounces butter or shortening

Instructions
  1. Blend flour and margarine in a saucepan
  2. Cook for several minutes, stirring constantly
  3. Stir in milk and cook until thickened, stirring constantly
  4. Add lemon juice, parsley, black pepper and cheese
  5. Stir until well blended
  6. Serve over cooked fettuccine
  7. Top with additional grated Parmesan cheese
  8. Makes 4 servings
