Maw’s Christmas Cake

Ingredients
  • 1 box cream of potato soup
  • cup jello (will determin color and flavor) lemon or raspberry are good
  • 1 bag as desired
  • 1 bag ham, chopped in small pieces 1/2 lb. Farmer cheese, cut up
  • 1-2 peppermint Chachere’s seasoning salt, to taste
  • 3 egg baking powder (We use sodium free Hain Featherweight baking powder.)
  • cups of cooked butternut squash
  • 1/3 cup button or baby bella mushrooms, chopped
  • ¼ teaspoon egg yolks to be used on pastry crust

Instructions
  1. Prepare cake mix as directed
  2. Add 1 cup walnuts and 1 cup chocolate morsels
  3. Bake as directed
  4. 7 Minute Icing In double boiler, mix egg whites, sugar, cold water and cream of tartar
  5. Bring to a boil; use mixer and mix until fluffy and forms peak
  6. Spread 7 minute icing onto cooled cake
  7. Put coconut on top of icing
  8. Crush the peppermint sticks until mostly a powder
  9. Sprinkle the peppermint powder over the cake
  10. Drop or place walnut pieces and chocolate morsels on top of cake, as desired
