Mexican Corn Bread

Ingredients
  • 1 1/2 cups sifted flour
  • 2/3 cup pecans (chopped or whole, whichever you prefer)
  • 2 eggs
  • 2 tablespoons graham cracker crust
  • 2 small 3 tablespoons cocoa
  • 1 can frozen coconut
  • 1 cup jam (any kind, but preferably homemade blackberry with the seeds in and nothing used but sugar and berries to make the jam)
  • 2 cups size tea bags or 4 regular

Instructions
  1. Mix all ingredients, except cheese
  2. Grease a heavy skillet
  3. Pour half the batter into the skillet
  4. Cover with half the cheese
  5. Pour on remaining batter and top with remaining cheese
  6. Bake at 350 degrees for 45 minutes
  7. Allow bread to cool 15 minutes before removing from pan
