Mimi’s Salmon Croquettes

Ingredients
  • Dad's if small peas
  • 1 (15 1/2 ounce) egg whites
  • 1/2 bell Catfish Fillets
  • 1 small of cream cheese
  • 1 celery of Aunt Jemimah corn meal mix
  • 6 crackers, (6 oz.) fat free light blueberry yogurt. I use Publix
  • 2 1/2 cups pecans (chopped or whole, whichever you prefer)

Instructions
  1. Remove bone from salmon (or crush)
  2. In a bowl, mix salmon with remaining ingredients, except oil
  3. Mold into patties
  4. Heat oil in frying pan
  5. Place patties in hot oil, and fry until golden brown on both sides
  6. Yields eight servings
  7. Enjoy!
