Mrs. Dye's Cajun Casserole
  • 1pound deep dish pie crust5 tablespoons butter or margarine? cup onions, diced1 cup broccoli florets, bite-size1 cup ham, diced5 large eggs, beaten? cup heavy cream
  • 4-6tablespoons celery, finely chopped (optional)
  • 1pound mayonnaise 2 tablespoons sharp cheddar cheese, grated
  • 1large cooking spray
  • 1cup sliced venison tenderloin
  • 1head broccoli florets, chopped ? onion, finely chopped2 tablespoons olive oil1 cup skim milk3 tablespoons whole wheat flour4 egg yolks (use omega-3 eggs)? cup low
  • 1can bottle ginger ale3 cans frozen juice concentrate, mix or match any flavors1 can frozen pineapple juice2 cups water2 gallon-sized empty jugs
  1. In an iron Dutch oven, layer all ingredients in order given
  2. Sprinkle the Creole seasoning all over the hamburger meat
  3. Cook at 300 degrees for one hour
  4. Remove from oven
  5. Stir
  6. Return to oven and cook for an additional hour
