Instructions
  1. Cook potatoes in microwave for eight to 10 minutes or until tender
  2. While potatoes cook, in a large skillet toss and brown chicken in olive oil over high heat in five minutes
  3. Add potatoes; sauté and toss until potatoes are lightly browned
  4. Add salsa and corn; toss until heated through serves four
