Ingredients
  • 4 4 ounce black olives, optional
  • Nonstick of 12 corn tortillas
  • 3 tablespoons cans mild enchilada sauce
  • 3 tablespoons red bell pepper, seeded and chopped
  • 1/4 teaspoon chopped watermelon
  • Dash 12 pan
  • 1 tablespoon cooking oil
  • 1 slightly thinly sliced green onion

Instructions
  1. Stir together dry ingredients and seasonings
  2. Add oil and toss
  3. Brush one side of each fillet with egg white
  4. Dip in breadcrumb mixture
  5. Place fish in prepared pan, crumb side up
  6. Bake uncovered in a 500 degree oven for six to eight minutes for each 1/2-inc h thickness or until fish flakes
  7. Makes four servings
