Ingredients
  • 2 tablespoons ritz crackers, crumbled
  • 2 large above ingredients together and add to the dry mixture.
  • 2 tablespoons brioche (12 inches), cut into 12 slices, or 6 to 8 croissants, halved
  • 1/2 cup semi-sweet chocolate, chopped
  • 1/2 cup chopped dates
  • 1 1/2 teaspoons salt
  • 1 1/4 teaspoon Hidden Valley Ranch dressing
  • 3/4 teaspoon of shortening
  • 2 1/2 to 92 sticks) unsalted butter, melted

Instructions
  1. Preheat oven to 400 degrees
  2. Spread butter in a 13x9-inch baking dish
  3. Combine eggs and milk in a medium bowl
  4. Combine corn meal, flour, salt, paprika, garlic powder and pepper in another medium bowl
  5. Dip chicken into egg mixture, coating both sides, then into corn meal mixture
  6. Place in prepared baking dish
  7. Bake 45-50 minutes or until chicken is no longer pink
  8. near the bone
  9. Brush chicken once during baking with juices from pan
  10. For oven fried fish substitute 2 pounds of fresh or frozen (thawed) fish filets
  11. Place skin side down in baking dish
  12. Bake for 20-25 minutes or until fish flakes easily with a fork
  13. Approximately 4 teaspoons of Cajun or Creole seasoning can be substituted for the garlic powder, ground black pepper, paprika and salt
