Papa’s Pan Crusted Catfish Fillets

Ingredients
  • 4 - ounce cheese ( any kind).
  • 1 teaspoon cucumbers, peeled and quartered crosswise
  • 1 tablespoon Topping:
  • 1/4 teaspoon of bacon, cooked crisp and crumbled
  • 1 dill of barbeque sauce ( any flavor)
  • 1/8 cup ground beef or ground turkey
  • 1/3 cup French bread
  • 1 teaspoon Hidden Valley Ranch dressing
  • salt and pepper, to taste
  • 2 teaspoons of butter

Instructions
  1. Salt and pepper the catfish fillets
  2. Smear both sides of fillets with mustard
  3. Sprinkle dill on the fillets
  4. Let set up to 2 hours
  5. Sprinkle with the lemon juice and lemon zest
  6. Mix the flour, cornmeal mix and paaprika together
  7. Coat the fish fillets with the cornmeal mixture, lightly shake off any excess
  8. Heat the butter in a non-stick skillet over high heat making sure to spread the butter over the entire skillet
  9. Just before the butter starts to brown place the catfish fillets in the skillet
  10. Cook the fillets approximately 2 minutes or until crspy brown
  11. Turn the fish fillets and lower the heat to medium high heat
  12. Cook approximately 2 minutes on this side or until crspy bown
  13. Turn the fish fillets once more and cook an additional 1
  14. 5 minutes until golden brown and crispy
  15. Serve immediately
  16. Makes 4 servings
