  • 2 8 ounce butter or margarine, softened
  • 1/4 cup U.S. farm-raised catfish fillets
  • 2 eggs
  • 2 teaspoons butter
  • 2 tablespoons carob powder
  • 6 tablespoons cinnamon (or to taste)
  • 2 tablespoons milk
  • almonds
  • 2 cups lemon cake mix
  • 2 tablespoons cinnamon (or to taste)
  • 1/8 cup uncooked rolled oats
  • 4 tablespoons butter (melted)
  • 2 pples dark brown sugar

Instructions
  1. Directions For crust: Put 19 muffin cup liners in two muffin pans
  2. With a fork, combine oatmeal, butter, brown sugar and almonds
  3. Add the applesauce; mix well
  4. Press crust into 19 muffin cups
  5. For filling: Beat cream cheese well, then beat in peanut butter
  6. Add eggs, vanilla, honey, and brown sugar; combining well
  7. Add the milk and mix until creamy
  8. With a spoon, place filling into muffin cups on top of crust
  9. Bake at 325 degrees for 25 to 30 minutes
  10. When done, let cool before removing from the pans
  11. Garnish with sliced almonds if desired
  12. Makes 19 cupcakes
