  • 2 cups large or jumbo eggs
  • 6 strips smoky bacon
  • 2 tablespoons grated sharp cheddar cheese, divided
  • 1 teaspoon egg
  • ¼ teaspoon mushrooms, diced

  • 2 cups large or jumbo eggs
  • 6 strips smoky bacon

Instructions
  1. Grease a cookie sheet
  2. Cook bacon any way you like until it is super crispy
  3. Pat dry with paper towel
  4. Let cool, then chop as finely as possible (think dust)
  5. Reserve
  6. In a saucepan over medium-high heat, add sugar
  7. Stir constantly for approximately four minutes or until sugar melts into a light-golden liquid
  8. (If lumps develop, keep stirring
  9. They’ll melt away
  10. ) Keep stirring for approximately 2 more minutes or until liquid turns the color of butterscotch
  11. Remove from heat and immediately stir in butter
  12. Then add baking soda and mix thoroughly
  13. Stir in bacon and chipotle
  14. Pour onto the greased cookie sheet and let cool until hard (approximately 15 minutes)
  15. Use a mallet or your hands to break into bite-size pieces
  16. Store in an airtight jar
  17. Makes about 3 cups
