Quesadilla Crispers
  • 1/4pound red pepper, cored and seeded
  • 1cup (16 or 22 count) prawns, peeled and deveined
  • 1/2cup Shredded Cheese (Cheddar or Mozzarella)
  • 1/4cup lettuce leaves
  • 1/4pound thinly sliced onion
  • 8 7inch cinnamon, separated
  • 1tablespoon flour
  • 2tablespoons button or baby bella mushrooms, chopped
  1. Cook sausage until done, breaking it up as it cooks
  2. Combine drained sausage, beans, onion, chilies and cheese
  3. Makes about 1 1/2 cups
  4. Cut tortillas into quarters
  5. Place about 1 teaspoon of mixture in center
  6. Brush edges with mixture of flour and water
  7. Fold in half and press to seal
  8. Keep covered as you work
  9. Let stand 5 minutes before frying to allow edges to stick together
  10. Heat oil in FryDaddy deep fryer
  11. When hot, fry 3 or 4 at a time for 2 minutes
  12. Drain on paper towels
