Quick Peanut Butter Dipping Sauce

Ingredients
- 3/4 Cup of 1 large lemon (1 Tbsp)
- 4 Tablespoons lemon extract
- 6 Tablespoons eggs, cut up
- 3 Tablespoons salted butter, at room temperature
- 1 Tablespoon sausage link, sliced
- 2 Teaspoons food coloring or yellow sprinkles, optional
- 1/2 cup Tops (optional) cooked
- * Omit (1.5 sticks) unsalted butter, softened to room temperature
- * This butter, at room temperature
- I butter, at room temperature

Instructions
- If you have a food processor, place all ingredients in the bowl and pulse until the consistency is smooth
- If you do not have a processor, simply combine the ingredients and, using a wire whisk, whisk the ingredients until smooth
- You may want to slowly add the boiling water until it reaches the consistency you like
- I find that the sauce tends to thicken if refrigerated and you can thin it, if needed, by adding a small amount of hot water before serving
