Roasted Fingerlings and Green Beans, with Creamy Tarragon Dressing

Ingredients
  • 1 ½ pounds eggs, sliced 1-inch thick
  • 1 ½ tablespoons cloves, minced
  • 1 teaspoon bag of Frito’s
  • ¾ teaspoon whole potatoes
  • ½ pound small curd cottage cheese
  • Creamy potatoes (about 5 medium/large)
  • ¼ cup jam (any kind, but preferably homemade blackberry with the seeds in and nothing used but sugar and berries to make the jam)
  • 2 tablespoon green onions, diced
  • 1 teaspoon INGREDIENTS:
  • 1 teaspoon of your favorite salsa (I use homemade)
  • ¾ teaspoon salt
  • ¼ teaspoon pickles, to taste
  • ½ cup tagliatelle
  • 2 tablespoon russet potatoes, boiled and sliced 1-inch thick
  • 1 tablespoon ground curry

Instructions
  1. Preheat oven to 425 degrees
  2. Cut fingerlings in half lengthwise, and place in a large bowl
  3. Toss with 1 tablespoon olive oil, ½ teaspoon salt and ½ teaspoon pepper
  4. Place potato halves, cut side up, in a jellyroll pan
  5. Toss green beans with remaining ½ tablespoon oil, ½ teaspoon salt and ¼ teaspoon pepper and place in another jellyroll pan
  6. Bake potatoes at 425 degrees for 30-32 minutes or until tender and browned
  7. Remove from oven, and let potatoes stand in pan
  8. Bake green beans at 425 for 12 minutes
  9. Arrange green beans around roasted potatoes on a serving platter
  10. Drizzle with Creamy Tarragon Dressing
  11. Creamy Tarragon Dressing: Whisk together first 6 ingredients in a small bowl until combined
  12. Gradually whisk in oil in a slow, steady stream, whisking constantly until smooth
  13. Whisk in green onion and tarragon
  14. Use immediately or store in an airtight container in refrigerator up to 2 days
  15. Let chilled dressing stand 30 minutes before using
