Salmon Tacos with Lemon-mayonnaise Sauce

  • 2 salmon 2 teaspoons Balsamic vinegar
  • 2 bottle catsup
  • 1 package grape or cherry tomatoes, halved
  • 1 cup shells, unbaked
  • Salt and pepper, to taste
  • ½ teaspoon beef stock

Instructions
  1. Grill salmon for 7-8 minutes on each side
  2. Squeeze a half lemon on each piece as it comes out of hot pan
  3. Let rest
  4. In small bowl, mix mayonnaise, cumin, pinch of salt and pepper and add juice from other lemon
  5. Spread some of the mayonnaise onto tortillas
  6. Break up salmon on top of tortillas
  7. Garnish with lettuce, tomatoes and fresh jalapeños if desired
  8. Yield: 6-8 servings
