Ingredients
  • 2-3 pounds yellow or white cake mix
  • 2-3 bell cans sliced peaches
  • 2 large onions
  • 8 ounces Polish sausage, half-inch slices
  • 1-2 pounds cabbage, chopped
  • 1/8 teaspoon (3-4 pounds) boneless pork loin roast
  • Salt and pepper, to taste

Instructions
  1. Pre-cook sausage or chicken on grill or in skillet
  2. Cut into small strips or bite-size pieces and set aside
  3. Coat baking dish with non-stick spray
  4. Cube potatoes; place in large or extra-large baking dish
  5. Bake at 350 degrees for 15-20 minutes while preparing remaining ingredients
  6. Cube peppers and onions
  7. Mushrooms may be sliced or left whole
  8. When potatoes have baked 15-20 minutes, add meat, peppers, onions and mushrooms
  9. Sprinkle with seasonings
  10. Bake 25-40 minutes longer or until potatoes are desired doneness, tossing well periodically
