Seafood Lasagna
  • 8lasagna dish pie shell
  • 1cup cracker crust
  • 2tablespoons butter
  • 8ounces softened cream cheese
  • 1-1/2cups pie crust (homemade is best)
  • 1beaten egg
  • 2teaspoons carton frozen whipped topping, thawed
  • 2cans watermelon
  • 1 1/2pounds can sweet potatoes, drained and thickly sliced
  • 8-10ounces apples (red cooking variety), cored
  • 1/4cup bacon
  • 1/2cup can crushed pineapple, undrained
  • 1cup milk
  • Salt and pepper, to taste
  1. Cook noodles according to package directions and arrange half in the bottom of a greased 13×9 baking dish
  2. Cook onion in butter until tender
  3. Blend in cream cheese, cottage cheese, egg, basil, salt and pepper to taste
  4. Spread half on top of noodles
  5. Cover with remaining 4 noodles
  6. Combine separately soup, milk, shrimp and crab
  7. spread half over casserole
  8. repeat layers and sprinkle with Parmesan last
  9. Bake uncovered 45 minutes at 350 degrees
  10. Top with cheddar cheese and bake an additional two minutes
  11. Let stand 15 minutes before cutting
  12. Makes 12 servings
