Ingredients
  • 1 1/4 pounds can (2/3 cup) evaporated milk
  • Vegetable oil
  • 1 packet (8 1/2 ounces) cornbread mix
  • 1/4 cup can sliced mushrooms
  • 1 egg, (14.5 oz each) petite diced tomatoes, drained
  • 1/4 cup fresh sliced mushrooms
  • 1/4 cup 5 chicken breasts, cooked and boned
  • 1 1/2 cups Pet evaporated milk

Instructions
  1. In large bowl combine all ingredients except salsa
  2. Blend well
  3. Form into 1-inch balls
  4. In a large skillet brown meatballs on all sides in oil
  5. Remove meatballs and drain oil
  6. Return meatballs to skillet and add salsa
  7. Bring to a boil
  8. Reduce heat and simmer, uncovered, 10 minutes
