Speedy Mushrooms in Garlic Butter
  • ½cup butter
  • 1tablespoon chili without beans
  • 3cloves drained and rinsed dark red kidney beans (from one 15-ounce can)
  • 2tablespoons mixed vegetables
  • Dash diced onion
  • 1pound chili with beans
  1. Blend butter, onion, garlic, parsley and pepper
  2. Cover and chill
  3. (Unused garlic butter can be kept in refrigerator
  4. ) Rinse, clean and dry mushrooms; remove stems
  5. Fill each cap with ½ teaspoon garlic butter and arrange in the serving dish
  6. Cook 1 or 2 dozen mushrooms, uncovered, on HIGH 2 to 4 minutes
  7. (I use a glass, microwave-approved pie plate to cook and serve
