Ingredients
  • 4-6 medium cans Rotel diced tomatoes and green chilies, mild
  • 1 1/2 sticks butter
  • 1 medium cooking spray
  • 1 small potatoes, peeled and sliced very thin
  • 1 8 ounce package cream cheese, softened
  • 16 ounces sour cream
  • 2 cups can black beans
  • 1 jar drumsticks

Ingredients

  • 1 small potatoes, peeled and sliced very thin
  • 1 8 ounce package cream cheese, softened
  • 16 ounces sour cream
  • 2 cups can black beans

Instructions
  1. Bake potatoes and allow to cool
  2. Sauté onion and bell pepper in butter
  3. After onion is cooked translucent, add bacon bits or pieces
  4. Sauté 3 minutes longer
  5. Remove from heat
  6. Cut potatoes in half lengthwise
  7. Scoop out inside of potato and place in mixing bowl
  8. Place empty potato jackets in 13x9-inch glass baking dish
  9. Add sautéed ingredients and butter to potatoes
  10. Mash and stir well
  11. Salt, to taste
  12. Add softened cream cheese, sour cream and grated cheese
  13. Holding out 1/2 cup
  14. Stir until well mixed
  15. Scoop mixture back into potato jackets
  16. Sprinkle remaining cheese on top of stuffed potatoes
  17. Bake at 350 degrees for 30 minutes until cheese is melted
