Ingredients
  • 20 ounce catfish fillets, skinned
  • 1 1/2 pounds of Fritos chips
  • 3 tablespoons pecans (chopped or whole, whichever you prefer)
  • 1/2 cup block of cream cheese
  • 1/4 cup frozen sliced okra
  • 2 tablespoons fresh rosemary leaves
  • 1/2 teaspoon salt
  • 1/4 cup cider vinegar
  • 2 tablespoons chili powder
  • 1 small chopped green onions with tops

Instructions
  1. Drain pineapple, reserving juice; set both aside
  2. Brown pork in a large skillet; stir in water
  3. Cover and simmer one hour or until tender
  4. Combine sugar, cornstarch and salt in a medium size bowl
  5. Stir in pineapple juice, vinegar and soy sauce
  6. Add to pork and cook, stirring constantly until smooth and thick
  7. Add pineapple chunks, green pepper and onion; toss lightly and cook 2-3 minutes
