Ingredients
  • 1 pound diced yellow onion
  • 2 large box Penne Rigate pasta, cooked, rinsed in cold water and drained
  • 1 large instant brown rice
  • 1 16 ounce bell pepper, cut in bite-size pieces
  • 1/2 cup of frozen carrots, thawed
  • 2 teaspoons salt
  • 1 to Apple Rice:
  • 1/8 teaspoon Ranch dry season mix

Instructions
  1. Heat oven to 350 degrees
  2. In a large skillet brown meat with onion and green pepper
  3. Drain off fat
  4. Stir in tomatoes, rice, salt, chili powder and pepper
  5. Heat through
  6. Pour into a greased 2-quart casserole dish
  7. Cover and bake for 1 hour
  8. Makes 4 to 6 servings
