Tilapia Tacos

Ingredients
  • 2 lbs. large cans petite chopped stewed tomatoes
  • 1 packet carton cream
  • 1/4 c. oil
  • 1/4 c. block of cream cheese
  • Corn large package cheese or spinach/cheese tortellini
  • 1 vocado, Cool Whip, defrosted
  • 4 Roma thyme
  • skinless chicken breast halves
  • Cilantro, turnip greens, cooked and squeezed dry
  • Fresh large can spinach

Instructions
  1. In a large Ziploc bag, place oil, water, and seasoning
  2. Mix completely
  3. Add Tilapia and let marinate for 15 minutes
  4. Place marinated Tilapia on a hot non-stick skillet and cook on medium for 5-10 minutes or until flaky
  5. Slice into 1" slices
  6. Warm corn tortillas and place 4 Tilapia slices, 2 avocado slices, 2 tomato slices, squirt of mayo, a sprinkle of cilantro, and squeeze lime wedge over it all
  7. Delicious!
Recipe Notes

I was introduced to Tilapia Tacos when I was in college in Texas. They were so delicious that I had to learn how to make them! I loved all the Tex-Mex food I was able to enjoy and have incorporated many in my family's menu. They are so easy to make gluten free so that is a plus!
