Ultimate Catfish Cheese Sandwich

Ingredients
  • 4 5-6 ounce limes
  • 1 1/4 cups molasses
  • 3 jumbo eggs
  • ½ cup Tabasco
  • ½ cup dried basil
  • peanut oil for frying
  • 8 slices chicken wings
  • 16 slices canola oil or olive oil (I use garlic-infused olive oil)
  • Jalapeno cold water
  • ½ cup pepper and garlic powder to taste
  • ¼ cup cracker crust
  • ½ teaspoon garlic
  • ½ cup sausage browned, 1c cheddar cheese grated, 8-12 slices cubed bread, 3/4c milk, 6 eggs beaten, 1 can cream of mushroom soup, and 1/2 can milk (soup can).
  • 2 cups chili pepper, chopped
  • 2 tablespoons elbow macaroni
  • 1 lemon beer
  • 1 teaspoon white Chili seasoning
  • 1 teaspoon beef bouillon

Instructions
  1. Make the tartar sauce first so it can mellow in the refrigerator
  2. Place pickle relish, onion, garlic, and seeded jalapenos in a food processor and finely chop
  3. Drain off any liquid
  4. Add this to mayo, mustard, juice and zest from the lemon, black pepper, dill, and sugar
  5. Stir thoroughly until smooth and chill in refrigerator until ready to serve
  6. Preheat oven to 375 degrees
  7. Make batter by mixing 1 cup of breader with eggs, beer and buttermilk
  8. Batter should be drippy not stiff
  9. Coat fillets in dry breader on a plate and then dip in the batter
  10. Place battered fillets in hot oil (375 degrees) Temperature is critical, if it’s too low fillets will be greasy, not crispy
  11. Fry for 8-10 minutes until brown
  12. Fish will float partly out of the oil when done
  13. While fish is frying, toast bread lightly in toaster and place on lightly greased cookie sheet
  14. Place two slices of cheese on each piece of toast and cook in oven until bubbly
  15. Drain oil off fillets on paper towels
  16. Place fillets on cheese bread, spread chilled tartar sauce over fillets and top with second piece of bread
  17. Add slice of tomato and lettuce if desired
