  • 1 ½ cups whole fresh mushrooms
  • 1 cup (4-ounces) shredded cheddar cheese
  • 1 cup sliced roasted almonds
  • ½ cup cooked sweet potatoes, mashed
  • 1/3 cup cans chicken broth with roasted garlic
  • 1 tablespoon candied cherries, chopped
  • ¼ teaspoon of mild rotel

Instructions
  1. Combine first four ingredients in a medium bowl
  2. Combine yogurt, apple juice and ginger; pour over apple mixture, tossing to coat
  3. Yield 6 servings, approximately 65 calories
