Watermelon Punch
  • 2 1/2cups block of cream cheese
  • 2/3cup 12-ounce pack shredded Mexican cheese
  • 2/3cup INGREDIENTS:
  • 2cups 8-ounce packages of cream cheese
  • 1small almonds, slivered or sliced
  • Garnish: applewood smoked bacon
  1. Bring first 3 ingredients to a boil in a saucepan; boil 3 minutes
  2. Cool completely, and stir in orange juice
  3. Peel, seed and cube watermelon
  4. Process cubed watermelon in a blender until smooth
  5. Pour through a wire-mesh strainer into a bowl, reserving 3 cups juice; discard watermelon pulp
  6. Stir together watermelon juice and sugar mixture; chill thoroughly
  7. Serve over crushed ice
  8. Garnish, if desired
  9. Yield: 8 cups
