1 cup white or brown rice, uncooked<br />2 14-ounce cans chicken broth<br />1 14-ounce can tomatoes<br />1 medium onion, diced<br />1 clove garlic, diced<br />1 bay leaf<br />1 tablespoon olive oil,
Combine all ingredients except rice, meat and seafood. Cover and bring to a full boil. Add rice and choice of meat, simmer for 40 minutes. Seafood will need to be added the last 20 minutes.
