Wilted Spinach with Tomatoes

2 tablespoons extra virgin olive oil
1/2 pint grape tomatoes
2 garlic cloves, chopped
Salt and pepper, to taste
1 pound spinach, triple washed, steamed and coarsely chopped
Preheat oil in a large skillet over medium-high heat. Add the grape tomatoes and cook until they start to burst, 4 to 5 minutes. Add the garlic, season the tomatoes with salt and pepper and cook for 2 more minutes. Add the spinach, turning it until it it partially wilted. Adjust the salt and pepper and serve immediately. Yield: 2 servings.
