Skinny Mashed Potatoes

5 large potatoes cut into 1-inch pieces
2 14.5-ounce cans beef or chicken broth
Generous dash of pepper
Place potatoes and broth in a saucepan. Bring to a boil over high heat. Cover and cook on medium heat 10 minutes or until potatoes are tender. Drain; reserve broth. Mash potatoes with 1 ΒΌ cups broth and pepper. If needed, add additional broth until potatoes are desired consistency. Serves about 6.
