2-3 pounds red potatoes
2-3 bell peppers (green, red, yellow or combination)
2 large onions
8-ounces whole fresh mushrooms
1-2 pounds smoked sausage or chicken
1/8 teaspoon each parsley, sage rosemary and thyme
Salt and pepper, to taste
Pre-cook sausage or chicken on grill or in skillet. Cut into small strips or bite-size pieces and set aside. Coat baking dish with non-stick spray. Cube potatoes; place in large or extra-large baking dish. Bake at 350 degrees for 15-20 minutes while preparing remaining ingredients. Cube peppers and onions. Mushrooms may be sliced or left whole. When potatoes have baked 15-20 minutes, add meat, peppers, onions and mushrooms. Sprinkle with seasonings. Bake 25-40 minutes longer or until potatoes are desired doneness, tossing well periodically.
